I am a recovering Army brat who loves to travel and start new adventures. My handsome husband and I met at Oklahoma Christian University and he whisked me away to Kansas. So, I bought some ruby red high heels and made Topeka my home. I have a rough and rowdy Princess 4-year-old girl, amazing twin boys (almost 3) and a newborn baby girl who all make every day an adventure. We are grateful to be part of an amazing church in Topeka who regularly challenges and encourages our whole family. I have been both a full-time working mom and a stay-at-home-mom and/or both at the same time at one point or another. I am constantly seeking God’s wisdom on “balancing it all” and following His plan for my life, not mine.
A mentor I deeply respect once told me, “Busyness is not a spiritual gift.”
This sage piece of wisdom has resurfaced in my mind more frequently as my family grows. To some degree, life is just busy! It is busy in all sorts of ways, and honestly, we are busy in some way or another in every season of our lives.
How many times have you answered, “Oh, we’ve just been busy!” when someone has asked how you’ve been doing lately? Is that what we should accept as the norm for our families?
As we face a spring and summer full of extra busyness with graduations, trips, weddings, family events, block parties, and holidays, I want to encourage you to consider a couple tips.
Tips to Un-crazy a Busy Summer
1. Don’t let a busy summer and routine change keep you from reading your Bible and spending time with God. As we see with Martha in Luke 10, Martha was anxious and troubled with all her preparations but Jesus wanted her to sit and listen to the “good portion” like her sister Mary. Guys, if I’m like anyone in the Bible, it’s Martha. Don’t be like Martha and me, spend extra time with the Lord.
2. If you have kids, try not to over-extend your kiddos for the sake of attending something. Sometimes, certain family gatherings scheduled smack in the middle of nap time just aren’t going to work. That’s OK.
3. Be intentional about days of rest. My family recently went through a four-day event binge which ended on a Sunday evening. My husband and I realized we never got a day of rest together as a family. There’s a reason God built that in…and even Jesus encouraged his disciples to rest in Mark 6:31. Anyway, that’s not a schedule we plan to replicate any time in the near future.
4. If you’ve committed to “bringing something” find three easy crowd-pleaser recipes for rotation. Easy and delicious is the key. One of my favorites is below. It’s fresh, healthy, and so easy.
In the end, there are some things we need to do and some things we don’t. Setting boundaries for yourself and your family through your decisions on calendar commitments can make all the difference.
2 cups of cooked quinoa (cooked according to package directions, cooled to room temp). I also like couscous if I don’t have good quinoa on hand.
2 medium fresh tomatoes, diced small
1/2 cup very finely chopped red onion
2 green onions, thinly sliced
1 can (15 ounces) of sweet yellow corn, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1/2 cup chopped sweet red pepper
1/2 cup chopped green pepper
1 jalapeno pepper, seeded and chopped (2 if you like heat)
3/4 cup fresh cilantro leaves, chopped
1/4 cup lime juice, plus a few dashes more to taste before serving
3-4 tablespoons olive oil
2-3 garlic cloves, minced
1/4 teaspoon salt, or more to taste
1/4 teaspoon coarsely ground pepper
1 cup (4 ounces) crumbled queso fresco or feta cheese
Directions:
Mix everything together in a big bowl. Refrigerate for at least an hour, but overnight is better. Before serving, taste and add a little bit more oil and lime juice if it’s dry.

This is from the first year we grew a garden with our children. It was so exciting to make the square foot garden boxes, pick the seeds each child decided to plant, watch the first sprout pop up above the ground, and see the variety of God’s awesome creation. Then, we started harvesting some delectable garden goodness and in the process learned some lessons too!
Taste Bud Treats
Of course, you can just eat most items raw, straight out of the garden but we enjoy exploring different approaches with our taste buds, which brought us to these two yummy sandwiches.
Simple Ingredients: Honey Mustard, Tomato, Cheese and Basil
I love anything with basil, so when I noticed that some basil was ready to harvest, we promptly added it to our sandwiches. After taking her first bite, my youngest daughter shouted in a loud, baritone voice,
“Mom, I love these leaves! They are delicious!”
She should like them. I ate basil and cheese sandwiches every day for weeks when I was pregnant with her!
At a baby shower I attended, the hostesses served these delectable sandwiches. The mixture of herbs in the creamy spread was so enjoyable, I tracked down the person who made it to gather the recipe.
Simple Ingredients: Creamy Spread and Cucumbers
Creamy Spread (can also be enjoyed as a dip):
1 Cup Greek Yogurt
1 Cup Cream Cheese
2 teaspoons dried dill
2 teaspoons dried parsley
1 teaspoon salt
1 teaspoon onion powder
1/2 teaspoon garlic powder
Lesson Learned
God uses all his creations to teach us a little more about Him. Growing a garden has helped us grow in our understanding of our relationship with Him as well.
For example, when I was trying to learn how to harvest basil, I found this great video that explained exactly how to harvest the basil in such a way that the plant would continue to grow.
In the video she says,
“If you want your plant to continue to grow you are going to have to trim it down…You want to do it in a way that you don’t damage your plant and your plant can continue to grow.”
This video made me realize that God is pruning us all the time. He wants us to grow in our relationship with Him, but that means we can’t stay the same. In order to grow and be used for His glory, he prunes us in such a way that we may feel the change, but he doesn’t damage us.
In all this you greatly rejoice, though now for a little while you may have had to suffer grief in all kinds of trials. These have come so that the proven genuineness of your faith – of greater worth than gold, which perishes even though refined by fire – may result in praise, glory and honor when Jesus Christ is revealed.
His ways of refining us to make us stronger spiritually may not always feel comfortable at the time, but the growth it produces will bring glory to Him in the process.

Well, it’s late at night and I’m up against my deadline to submit my blog post. This summer has been crazy and hectic. Just today I spent the day at the doctor’s office and emergency room with my husband. I had ideas for writing and I actually have one that is almost finished. But, it’s hot out and I’m too tired! I don’t have anything left in me…nothing inspirational, nothing profound, nothing!
I’m not the only one who feels this way from time to time (please tell me I’m not). As moms, we can get overwhelmed by all of our responsibilities. We care for our children, work (I’m self-employed), and have numerous outside responsibilities.
God is there!
He is always there. No matter how tired and overwhelmed we feel. He tells us in Matthew 11:28, “Come unto me, all ye that labour and are heavy laden, and I will give you rest.” KJV
Healthy Tip #8
Rest! I know that is easier said than done, but if we do not take care of ourselves, then how can we take care of others? Remember, God rested on the seventh day, the Sabbath, as an example to us. So REST!
Now, if your family is like mine, they like hot meals. But who wants to cook a hot meal during the heat of summer? As I said earlier, “It’s hot, and I’m tired.” Here is a great, easy recipe that is hot but takes only a few minutes to prepare. It’s perfect for using so many of the fresh veggies that are available this time of year.
Recipe
Summer Frittata
I took this frittata to church one night. Everyone loved it!
6 eggs
1/4 c. milk
Salt and pepper to taste
10 okra pods, cut into 1/2 inch pieces
1/4 onions, diced
1 small potato, diced
1/2 c. shredded cheese (I use cheddar but you can use your favorite.)
Mix eggs, milk, salt, and pepper in a bowl. Set aside. Heat a broiler-safe skillet (I prefer cast iron). Add a small amount of oil and and the veggies. Cook about 5-7 minutes or until the potatoes are tender. Add the egg mixture. Stir just enough to incorporate the veggies but not enough to scramble the eggs. Top with cheese, and then place in the broiler until the egg is set. Serve in wedges with a salad and some fresh cantaloupe or watermelon.

My husband and I love gardening. Okay, maybe “love” is too strong of a word. We certainly do enjoy it as it is a major source of income for us. The one thing that we dislike about our hobby/occupation is the WEEDS.
My husband and our two sons were working out in the garden one day about 12 years ago, when one of the boys asked, “Why do we have weeds?” My husband explained to the boys that when Adam and Eve ate of the fruit from the Tree of the Knowledge of Good and Evil that the weeds were a part of the punishment.
Then to Adam he said, “Because you have listened to the voice of your wife, and have eaten from the tree about which I commanded you, saying, ‘You shall not eat from it’; Cursed is the ground because of you; In toil you will eat of it all the days of your life. Both thorns and thistles it shall grow for you; And you will eat the plants of the field.” –Genesis 3:17-18 (NASB)
Weeds and sin are the same! They both get in the way of productive lives. Weeds keep the plants you want to grow from thriving. Sin keeps us from thriving. It keeps us separated from God. When we are wallowing in sin and not living in God’s will, we cannot have a complete and full relationship with Him. The weeds (our sin) gets in the way.
In case you have been following my series on healthy eating and living, yes, this is the third installment in that series. (Check out post #1 & #2.) You may wonder what this has to do with being healthy. Well, the growing season has arrived. It is time to get out there and start planting all those fresh veggies. And, yes, you will have to toil and get rid of the weeds but you will have a great crop of yummy, healthy food to show for it.
Health Tip #3: Grow your own food. This not only gets you fresh vegetables to eat but it also gets you out of the house and into the fresh air and gets you active. This is especially good if you have children who are picky eaters. When they get involved in growing and preparing their food, they are more likely to try new things.
Gardening does not have to be difficult or a lot of work. Start with container gardening. You just need a few large pots. You can put a variety of greens in a pot now. Add some radish and carrot seeds to one side and you have fresh salad for weeks. You can put a tomato plant in another pot and squash in yet another. Just make sure that you get bush type plants/seeds for the plants that get bigger.
The maintenance of these pots is fairly simple. Start with a good growing medium. Do not use dirt from your garden as it can contain weed and grass seed.
Like us, your plants need to eat and drink. Do not overdo it. When the soil starts to dry out, water them. Periodically, I feed mine fish emulsion. This is available in garden centers or you can make your own.
One of the best things you can do if you’re a coffee drinker (make at home, not Starbucks) is add your coffee grounds.
Your tomato plants will also love your banana peels and eggshells. One more thing about the tomatoes is that if they are blooming but not producing, beat them with a broom. Yes, literally, run a broom back and forth over them and that will help pollinate them.
Just a few hours a week and you will have great-tasting vegetables in your own backyard.

Asparagus
1 lb asparagus, tough ends trimmed
1 clove garlic, minced
1 T olive or grapeseed oil
Salt and pepper to taste
Heat cast iron skillet over high heat. Add oil, then remaining ingredients, stirring constantly. Cook for about 3 minutes and serve.
